Cabbage Soup     HT  SP  80mins

Serves 4    Hot Vegetable Vegetables  Fruit  Soups Gluten Wheat Dairy free  Eggless

 

Ingredients

1L/2pts Beef Stock

1 teasp Sugar

1/2 tbsp Lemon Juice

1/2 teasp Dried Oregano

Salt and Black pepper

100g/4oz Cooked Beetroot, grated

100g/4oz Potato, grated

100g/4oz Cooking Apples, grated

100g/4oz White Cabbage, finely shredded

1 Onion, chopped

1/2 Green Capsicum, deseeded finely diced

2 teasp Tomato Paste

Instructions

 

1. Place the stock in a large saucepan and bring to the boil. Add the remaining ingredients, return to the boil then simmer for 1 hour.

 

2. Adjust the seasoning and serve hot.
