Meatball Soup HT SP 55mins Serves 4 Hot Meat Soups Gluten Wheat Dairy free Ingredients 1.1L/2pts Water 50g/2oz Dried Peas, pre-soaked 50g/2oz Lentils 225g/8oz Minced Beef 1 Onion, finely chopped Salt and Black Pepper 4 Spring Onions, chopped 2 tbsp Fresh Parsley, choppedInstructions 1. Place the water in a large pan, add the peas and lentils, bring to the boil then simmer for 20 minutes. 2. Meanwhile, In a bowl, mix together the mince, onions, salt and pepper. Shape into small walnut sized balls and set aside. 3. Add the meatballs, spring onions, parsley, salt and pepper to the peas and lentils and simmer for a further 35 minutes. Serve hot.
