Minestrone with Bacon   HT  SP  Italian  60mins

Serve 4    Hot  Pork  Vegetables  Vegetable Soups  Italy  Europe

 

Ingredients:

1 x 400g/14oz tin Haricot Beans

3 tbsp Oil

2 Onions, chopped

2 Garlic cloves, crushed

4 rashers Streaky Bacon, chopped

1.1L/2pts Water

4 Tomatoes, peeled and chopped

2 tbsp Freshly chopped Parsley

1 teasp Fresh Thyme

1 teasp Freshly chopped Basil

1 Large Carrot, chopped

1 Large Potato, diced

1 Stick Celery, chopped

1 Leek, chopped

1/4 Cabbage, shredded

Salt and Pepper

25g/1oz Small Pasta e.g.

Ditalini, Farfallini

2 tbsp Grated Parmesan

 

 

Instructions

 

1. Heat the oil in a pan and fry the onions and garlic until soft and transparent. Add the bacon and fry for a further 3 minutes.

 

2. Add the drained beans, water, tomatoes, herbs, carrots, potatoes, celery, leek, cabbage, salt and pepper. Cover and simmer for 30 minutes.

 

3. Add the pasta and cook for a further 20 minutes or until the pasta is tender.

 

4. Just before serving, stir in the parmesan cheese. Serve hot.
