Pumpkin Soup HT West

Serves 4 Hot Starter Hors d'oeuvre Soups Caribbean
Ingredients 1 tbsp Butter 250g/9oz Onions, finely chopped 1 Garlic Clove, crushed 450g/1lb Pumpkin, deseeded, peeled and chopped 1 large Tomato, peeled and chopped 600ml/1pt Chicken Stock Salt and White Pepper 150ml/5 fl.oz. Single Cream A few drops Tabasco Sauce
Instructions
1. Melt the butter in a large saucepan, add the onion and fry gently until
soft and transparent.
2. Add the garlic, pumpkin, tomato and stock, bring to the boil then
simmer for 30 minutes.
3. Cool slightly, then pass through a sieve or process in a blender until
relatively smooth.
4. Return the soup to the pan together with the cream, tabasco, salt and
pepper. Reheat gently and serve hot.
