Red Lentil Soup Veg HT 60mins Serves 4 Hot Vegetarian Soups Gluten Wheat Free Eggless Ingredients 25g/1oz Butter 1 Onion, chopped 1 Stick Celery, chopped 150g/5oz Red Lentils 1.1L/2pts Vegetable Stock 1/4 teasp Ground Cloves 1/4 teasp ground Allspice Salt and Black Pepper Instructions 1. Melt the butter in a large saucepan and fry the onion and celery lightly for 10 minutes, but do not brown. 2. Add the lentils, stock and spices to the saucepan. Bring up to the boil, then turn down the heat and allow the lentils to simmer gently for 30-35 minutes, or until they are soft. Cool slightly. 3. Transfer to a liquidiser or food processor and process until smooth.
4. Return to the pan and reheat gently. Taste and season to taste with salt and black pepper if required.
