Stracciatella (Egg Soup) Veg HT Italian 15mins
Serve 4 Hot Vegetarian Soups Italy Europe
Ingredients: 1.25L/2pints Vegetable Stock 2 Eggs 2 tbsp Semolina 2 tbsp Pecorino Cheese 1 tbsp Fresh Parsley, finely chopped 1/2 teasp Fresh Basil, finely chopped Salt A pinch of Sugar A pinch of Nutmeg
Instructions
1. In a large saucepan heat the stock to boiling.
2. Mix the other ingredients together in a large mixing bowl and pour into the boiling liquid.
3. Continue to cook over a medium heat, stirring, for 5 minutes. Serve immediately.
