Tomato Bisque Veg

Vegetable Vegetables Vegetarian Soup Starter
Healthy Eating Gluten Wheat free
2 Onions, chopped
2 x 400g/14oz Tins Chopped Tomatoes
225g/8oz Soft or Medium Tofu
1 tbsp Vegetable Margarine
and Black Pepper
Place the onions, tomatoes, salt pepper and
water into a large saucepan. Bring to
the boil, then lower the heat and simmer, uncovered, for 20-30 minutes.
Place the tofu and margarine
into a food processor or liquidiser together with a
spoonfuls of liquid from the soup. Process
until well blended and smooth.
Add the tofu mixture to the saucepan and cook gently over a very low heat,
stirring from time to time, for a further 5 minutes. Serve hot.
