Mushroom & Seitan Stroganoff

Vegan Main Course Dairy Free Eggless
1 tbsp. Vegetable
1 medium Onion,
2 Garlic Cloves,
325g/12 oz Seitan,
cut into strips
Mushrooms, thinly sliced
3 tbsp. Lemon
1 teasp Freshly
1/2 teasp Sweet
Strong Vegetable Stock
2 tbsp. Tahini
1 Tomato, diced
2 tbsp freshly
Rice to serve
1. Heat the oil in a large frying pan, add the onion, garlic and seitan, and
sauté until the onions are soft and transparent.
2. Add the fresh mushrooms and continue cooking until mushrooms are soft,
stirring from time to time. Add the lemon juice, tarragon,
paprika, stock, tahini and tomatoes to the pan and
cook, stirring constantly, until it thickens.
3. Remove from heat. Season to taste with pepper.
4. To serve - transfer to a warmed serving dish and sprinkle with the parsley.
Serve hot with rice or noodles.
