Mushroom & Seitan Stroganoff    HT  Veg  MC  25mins

Serves 4    Hot   Vegetarian   Vegan   Main Course  Dairy Free  Eggless 


1 tbsp. Vegetable Oil

1 medium Onion, chopped

2 Garlic Cloves, crushed

325g/12 oz Seitan, cut into strips

450g/1lb Mushrooms, thinly sliced

3 tbsp. Lemon Juice

1 teasp Freshly Chopped Tarragon

1/2 teasp Sweet Paprika

480ml/16fl.oz. Strong Vegetable Stock

2 tbsp. Tahini

Black Pepper

1 Tomato, diced

2 tbsp freshly chopped Parsley

Rice to serve


1. Heat the oil in a large frying pan, add the onion, garlic and seitan, and sauté until the onions are soft and transparent.

2. Add the fresh mushrooms and continue cooking until mushrooms are soft, stirring from time to time. Add the lemon juice, tarragon, paprika, stock, tahini and tomatoes to the pan and cook, stirring constantly, until it thickens.

3. Remove from heat. Season to taste with pepper.

4. To serve - transfer to a warmed serving dish and sprinkle with the parsley. Serve hot with rice or noodles.
