Wheat Free cookies Baked Fayre
Glace Cherries, quartered
Brown Rice Flour
A pinch of Salt
Unsweetened Apple Juice
1 teasp Vanilla
Extract (check ingredients label)
the oven to 180C, 350F, Gas Mark 4 and lightly oil 2-3 baking sheets or line
with parchment paper.
2. Heat a
heavy frying pan until very hot, add the sesame seeds and toast for 8-10
minutes, stirring constantly, or until they start to pop.
3. Place the
cherries, rice flour, oats, salt and toasted sesame seeds
in a large mixing bowl then add the apple juice, oil and vanilla. Mix well with
a wooden spoon.
4. Using floured
hands, divide the dough into 12 balls then flatten each ball into a biscuit
about 1cm/ 1/2 inch thick.
5. Place each
biscuit on the oiled baking sheets, setting well apart, and bake for 25
minutes or until golden brown. Allow to cool on the baking sheets before
