Dairy Free Garlic Herb Bread Veg CD CBF 65mins plus proving
Makes 1 Loaf Cold Vegetarian Vegan Herbs Dairy Free Eggless Baked Fayre
Ingredients 15g/˝oz Dry Active Yeast 360ml/12fl.oz. Warm Water 2 teasp Olive Oil 2 teasp Salt 5 Garlic Cloves, crushed 1 tbsp Fresh Thyme Leaves (1 heaped teasp dried) 450g/1lb Whole Wheat Flour 125g/5oz Plain White Flour Cornmeal for dusting
Instructions
1. Place the yeast and warm water in a large mixing bowl, and allow to stand in a warm place for 10 minutes or until frothy.
2. Add the oil, salt, garlic, thyme, and whole wheat flour plus half the white flour and mix until a stiff manageable dough is formed, adding more white flour as necessary.
3. Turn onto a floured surface and knead for 5 to 10 minutes, or until dough is smooth and elastic. Place in a lightly oiled bowl, cover, and set aside in a warm place for 1 hour, or until doubled in size.
3. Turn the dough onto a floured surface and punch down then form into a round, place on a baking sheet which has been lightly dusted with cornmeal, cover with clingfilm, and set aside for 30 minutes to rise.
4. Preheat the oven to 230C, 450F, Gas Mark 8.
5. Uncover the bread, lightly brush with cold water and bake for 5 minutes. Reduce the oven temperature to 200C, 400F Gas mark 6 and continue baking for 20-30 minutes, or until the loaf is golden brown and sounds hollow when tapped. Cool on a wire rack.
