Dairy Free Rice Pudding HT CD Veg DP 20minsServes 4 Hot Cold Vegetarian Vegan Dairy Gluten Wheat Free Eggless Desserts Puddings Ingredients 480ml/16fl.oz. tinned Coconut Milk 450g/1lb Cooked White Rice Sugar to taste 1 teasp Vanilla Extract (check ingredients label) Instructions 1. Place the coconut milk in a medium saucepan and heat gently until it comes to a simmer. 2. Add sugar to taste and stir until dissolves then add the cooked rice and bring gently to the boil. 3. Reduce the heat and simmer until it thickens. Do not allow it to dry out too much. Remove from the heat and stir in the vanilla. Serve hot or cold.
