Dairy Free Tapioca Pudding Veg CD DP 25mins plus soaking and chilling
Serves 6 Cold Vegetarian Vegan Dairy Gluten Wheat Free Eggless Dessert
Ingredients 150g/+5oz Dry Tapioca Water 2 tbsp Maple Syrup 480ml/16fl.oz. Vanilla Soy Milk 1/4 teasp Salt 1 treasp Vanilla Extract (check Ingredients label) 2 teasp Arrowroot
Instructions
1. Place the tapioca in a bowl together with 360ml/12fl.oz. of water and leave to soak for 2 hours.
2. In a medium saucepan bring another 360ml/12fl.oz. of water and the soy milk to a simmer. Add the tapioca, vanilla, maple syrup and salt, stir well then simmer gently for 10 minutes, stirring frequently.
3. In a small mixing bowl, mix together the arrowroot with 1 tablespoon water and add it to the cooked tapioca. Simmer for a further 5 minutes, stirring constantly.
4. Transfer the tapioca to a serving dish, allow to cool then refrigerate for at least 4 hours before serving.
