Makes 1 x 20cm/8 inch Cake   Cold  Vegetarian  Spices Cakes  Baked Fayre   Gluten Wheat Dairy Free



4 eggs, separated

2 tablespoons Cornflour

175g/6oz Caster Sugar

50g/2oz Arrowroot

1/2 teasp Freshly Ground Nutmeg

1/2 teasp Ground Cloves (check ingredients label)

1 teasp Cinnamon (check ingredients label)

1 teasp Ground Ginger (check ingredients label)

teaspoon Bicarbonate of Soda

teaspoon Cream of Tartar

1 tbsp Golden Syrup




1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly grease a 20cm/8 inch cake tin.


2.In a mixing bowl, beat the eggs whites until stiff. Add the remaining ingredients and mix well. 


3. Transfer to the prepared cake tin and bake for about 25 minutes until golden brown and springy to the touch. Cool on a wire rack.
