Serves 2-3    Hot   Vegan  Vegetarian   Vegetable  Vegetables  Main Course  Eggless   Dairy  Gluten Wheat Free   


675g/1 ˝lb Potatoes, peeled and cut into chunks

˝ teasp Salt

3 Garlic Cloves, finely chopped

2 tbsp Olive Oil

210ml/7fl.oz. Fresh Tomato Sauce 

1 teasp freshly chopped Rosemary

1 tbsp freshly chopped Oregano

2 tbsp freshly chopped Parsley

Salt and Black Pepper


1. Preheat the oven to 190C, 375F, Gas Mark 5. Place the potato chunks, garlic and salt in a large mixing bowl and mix well.

2. Heat the oil in a large ovenproof casserole until hot. Add the potato mixture and sauté gently for 10 minutes, turning from time to time, until it just begins to colour.

3. Add the tomato sauce and herbs and season well with extra salt and pepper. Bring to the boil stirring, then cover the dish and transfer to the oven. Bake for 40 -45 minutes or until the potatoes are tender. Serve hot.
