Potatoes, peeled and cut into chunks

1. Preheat the oven to 190C, 375F, Gas Mark 5. Place the potato chunks,
garlic and salt in a large mixing bowl and mix well.
2. Heat the oil in a large ovenproof casserole until hot. Add the potato
mixture and sauté gently for 10 minutes, turning from time to time, until it
just begins to colour.
3. Add the tomato sauce and herbs and season well with extra salt and pepper.
Bring to the boil stirring, then cover the dish and transfer to the oven. Bake
for 40 -45 minutes or until the potatoes are tender. Serve hot.
