Sesame Raisin Biscuits CD Veg CBF 55mins
Makes 12 Cold Vegetarian Vegan Dairy Wheat Free Eggless Cookies Baked Fayre
Ingredients 75g/3oz Raisins Water 75g/3oz Sesame Seeds 240ml/8fl.oz. Brown Rice Flour 200g/7oz Rolled Oats A pinch of Salt 270ml/9fl.oz. Unsweetened Apple Juice 30ml/1fl.oz. Vegetable Oil 1 teasp Vanilla Extract (check ingredients label)
Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4 and lightly oil 2-3 baking sheets or line with parchment paper.
2. Place the raisins in a small saucepan and cover with cold water. Bring to the boil then remove from the heat and leave to soak for 10 minutes.
3. Meanwhile, heat a heavy frying pan until very hot, add the sesame seeds and toast for 8-10 minutes, stirring constantly, or until they start to pop.
4. Drain the raisins well then place them together with the rice flour, oats, salt and toasted sesame seeds in a large mixing bowl. Add the apple juice, oil and vanilla and mix well with a wooden spoon.
5. Using floured hands, divide the dough into 12 balls then flatten each ball into a biscuit about 1cm/ 1/2 inch thick.
6. Place each biscuit on the oiled baking sheets, setting well apart, and bake for 25 minutes or until golden brown. Allow to cool on the baking sheets before removing.
