Most people will immediately think of new season lamb, asparagus and rhubarb when asked what’s in season in spring (March – May in the UK), but there are lots of other very welcome fresh seasonal foods which are either coming into their own or in their prime at this time of year.

Although there are thousands of recipes on this site suitable for springtime cooking, below are links to seasonal produce featuring information and specially selected recipes using the freshest and best springtime ingredients including meat, fish, fruit and vegetables, many of which also include additional useful and informative editorials.

As well as lighter recipes, we’ve also included some more substantial “warmers” just in case the springtime weather in your area hasn’t caught up.

Whilst not definitive, below is a list of ingredients which are in season in spring.

Cherries, Rhubarb, Strawberries


Vegetables & Herbs in season in Spring

Asparagus, Broad Beans, Cabbages, Baby Carrots,  Cauliflower, Chives, Kale, Lettuce, Morel Mushrooms, New Potatoes (including Jersey Royals), Parsley, Peas, Purple Sprouting Broccoli, Radish, Rock Samphire, Rosemary, Sage,  Sorrel, Spinach, Spring Greens, Thyme, Watercress, Wild Garlic, Wild Mushrooms, Wild Rocket
 

Meat, Poultry & Game in season in Spring

Brown Crabs

Brown crabs are the most common crab found in the UK. It has a brownish-red shell, grows to a width of about 20cm/8 inches, and is available starts from April.

Morel Mushrooms

Morel Mushrooms have always been a highly prized fungi with a full meaty flavour. From the same family as truffles, they are in season in the UK between April and July.

Razor Clams

Razor clams have long thin shells which resemble cut-throat razors. A wonderful (if sometimes difficult to find in the UK) seafood with a texture similar to squid and the sweetness of scallops.

Rock Samphire

Rock Samphire is in season from the end of April and lasts through to October/November in the UK. It shouldn't be confused with marsh samphire, often referred to just as "samphire", which is in season in the summer.

Wild Sea Trout

This much sought after wild fish has a bright pink-red flesh due to its diet of crustaceans. As its name implies, sea trout migrate to the sea. As good as wild salmon but less expensive.

Wild Garlic

Wild garlic is in season in the UK from March to May. Also called Ramsons, buckrams, wood garlic or bear's garlic, it is a relative of chives, can be found in woodlands and hedgerows and is easily identified by its distinctive garlicky smell.
