Ras el hanout   CD  Veg  Moroccan  5mins  

 

Ras el hanout  is a popular spice blend used in some North African cuisines. The name translates to "top of the shop" and indeed, refers to the mixing of the best spices a vendor has to sell. There is no set recipe and individuals, shops and companies have their own unique spice blends however typically, the mix includes cardamom, clove, cinnamon, chilli, coriander, cumin, nutmeg and turmeric. Ras el hanout is used to flavour many foods including meat, poultry and fish.
 

 

Makes 4 tablespoons   CD  Vegetarian  Spices  Morocco  spice blend   Condiment  Seasoning  Gluten Wheat Dairy Free  Eggless   North African  Nth Africa

 

Ingredients

1-1/4 teaspoon ground allspice

2 teaspoons ground nutmeg

20 threads  saffron

1 teaspoons ground black pepper

1 teaspoons ground mace

1 teaspoon ground cinnamon

1 teaspoons ground cardamom

2 teaspoons ground ginger

2 teaspoons salt

1 teaspoon ground Turmeric

 

Instructions

 

1. Mix all the ingredients together and store in a cool, dark place, or in the freezer.

 

Can also be made with whole spices which should be toasted in a dry frying pan until aromatic then ground in a mortar with a pestle.
