Celery and Aubergine Stuffing Veg

Ingredients:
175g/6oz Fresh White Breadcrumbs
120ml/4fl.oz. Milk
25g/1oz Butter 2 Shallots, finely chopped
225g/8oz Aubergines (Eggplant), finely
3 Sticks Celery, finely chopped
1 teasp Dried Mixed Herbs
Salt and Black Pepper
Instructions
1.
Place the breadcrumbs in a bowl and pour the milk over the top. Leave to soak.
2. Meanwhile, heat the butter in a saucepan, add the aubergine, onion and celery and sauté gently until softened.
3.
Squeeze out the excess milk from the soaked breadcrumbs and add to the celery
