Juniper Marinade for Meat Veg CD ACC BBQ 50mins
Cold Vegetarian Vegetables Herbs Alcohol Barbecue Accompaniments Marinades Gluten Whet Dairy Free Eggless Ingredients 1 Onion 1 Carrot 1 Stick Celery 4 tbsp Olive Oil 300ml/10 fl.oz. Red Wine 1 Garlic Clove, crushed 1 Bay Leaf 3 Sprigs Thyme 3 Sprigs Parsley 2 Sprigs Marjoram 1 Sprig Rosemary 6 Black Peppercorns, lightly crushed 6 Juniper Berries, lightly crushed
Instructions 1. Peel and slice the onion. Clean and slice the carrot and celery. Heat the oil in a saucepan and sauté the vegetables gently for 6 to 8 minutes, stirring.
2. Add the wine, garlic, herbs, peppercorns and juniper berries. Bring to the boil and simmer, covered, for 30 minutes. Cool before using.
3. Strain after marinating and use as cooking liquid, either alone or mixed with stock.
