4 Plantains
Oil for deep frying


1. Cut the plantains in half lengthwise, then slice quite thinly.

2. Heat about 12cm/5 inches of oil in a wide saucepan until very hot then add half the plantain pieces and fry for a few minutes until reddy brown  and crisp.

3. Remove from the pan with a slotted spoon and drain on kitchen paper whilst you fry the remaining plantain.

Traditionally served with grilled fish. Also great served as a snack (like crisps).
