Baked Parsnip with Madeira Veg HT ACC 40mins
Serves 4-6 Hot Vegetarian Vegetables Alcohol Nuts Accompaniment Gluten Wheat Free Eggless
Ingredients 900g/2lb Parsnips,
peeled and cut into chunks
Instructions
1. Preheat the oven to 190C, 375F, Gas Mark 5 and grease a shallow ovenproof dish.
2. Place the parsnips in a large saucepan, cover with water bring to the boil then simmer for 10-15 minutes or until tender,
3. Drain the parsnips well , and place in a large mixing bowl together with the Madeira or sherry, cream and half of the butter. Season with salt and pepper and mash well.
4. Transfer to the greased dish, dot with the remaining butter and sprinkle walnuts over the top. Bake for 20 minutes until browned. Serve hot.
Makes a nice change to roasted parsnips as an accompaniment to roast turkey at Christmas.
