2 Onions, thinly
rind removed and crumbled
2 tbsp Freshly
Salt and Black
1. Slice the
potatoes very thinly and place in a large bowl. Cover with cold water and leave
to stand for 10 minutes. Drain the potatoes and dry well on kitchen paper.
2. Heat the oil in
a large frying pan, add the onions and sauté over a medium heat for 2 minutes
turning from time to time.
3. Add the
potatoes slices and cook for 15-20 minutes turning frequently until they are
tender and golden.
4. Add the basil
to the pan and mix well then sprinkle the cheese over the top and cook for 2
minutes, without stirring, until the cheese melts. Serve immediately.
