Broad Beans with Garlic and Sage

Serves 4-6 Hot Vegetarian

900g/2lb Fresh Young Broad (Fava) Beans
1 tbsp Olive Oil
2 tbsp Butter
2 Garlic Cloves, crushed
Salt and Pepper
1 tbsp Freshly Chopped Sage
1. Place the beans in a saucepan of lightly salted boiling water and cook for 5
minutes until tender. Drain well.
2. Heat the oil and butter in a large frying pan, add the garlic and sage and
stir fry over medium heat for 3-4 minutes.
3. Add the drained beans, stir to coat then season to taste with salt and
pepper. Serve immediately.
