Butternut Squash with Stilton Veg HT ACC 40mins
Serves 4 Hot Vegetarian Vegetables Herbs Accompaniment Eggless
Ingredients 450g/1lb Butternut Squash, peeled, deseeded and diced 225g/8oz Potatoes, peeled and diced 125g/5oz. Stilton cheese, crumbled 120ml/4 fl.oz. Sour Cream 1 Red Onion, finely chopped 1 teasp Salt 1 teasp Black Pepper 1 tbsp Freshly Chopped Basil 1 large Garlic Clove, finely crushed 1 teasp Tabasco sauce Fresh Parsley Sprigs to garnish
Instructions
1. Preheat the oven to180C, 350F, Gas Mark 4.
2. In a large mixing bowl, mix together the butternut squash, potatoes, cheese, sour cream, red onion, salt, black pepper, basil, garlic and Tabasco sauce.
3. Spoon potato mixture into a shallow ovenproof dish cover with foil and bake for 15 minutes.
4. Remove the foil return to the oven and continue to bake for a further 15 minutes. Serve hot as an accompaniment to meat or poultry.
