Hot Vegetarian Vegetables Accompaniment
Gluten Wheat Free eggless
50g/2oz Onions, thinly sliced
450g/1lb Carrots, peeled and thinly sliced
2 drops Vanilla Extract
Salt and Black Pepper
1. Heat the butter in a large saucepan add the onions and sauté for 5 minutes
Add the carrots and 120ml/4fl.oz. of water, cover and simmer for 20 minutes or
until very soft, adding a little more water if necessary.
3. Transfer to a food processor or blender, add the vanilla and process to a
puree. Season well with salt and pepper. Serve hot.
