Vegetarian Vegan Vegetables Dried Fruit Accompaniment Gluten Wheat Dairy free
1 medium Cauliflower, cut into florets
1 large Onion, chopped
4 tbsp Olive Oil
3 Garlic Cloves, chopped
3 Tomatoes, finely chopped
1 teasp Paprika
1 tbsp freshly chopped Parsley
Salt and Pepper
1. Bring a large saucepan of lightly salted water to the boil, add the
cauliflower florets and simmer for 5-6 minutes until barely tender.
2. Meanwhile heat
the oil in a large saucepan, add the the onion and garlic and sauté for 5
minutes, stirring from time to time.
3. Sprinkle in the
paprika, then add the sultanas, parsley and tomatoes. Mix well.
4. Drain the
cauliflower well then add to the tomato mixture. Mix well, adjust the seasoning
and cook, stirring, for about 5 minutes. Serve immediately.
