Chilli Kale Veg

Serves 4 Hot Vegetarian
Vegetables Accompaniment Gluten Wheat Free Eggless
1 tbsp Olive Oil
2 Garlic Cloves, chopped
˝ Onion, finely chopped
1 Chilli, very finely chopped
450g/1lb Kale Leaves, striped from the stems and chopped
150ml/5fl.oz. Fresh Vegetable or Chicken Stock
Salt and Black Pepper
1. Heat the butter and oil in a frying pan, add the garlic, onion and chilli and
sauté for 1 minute.
2. Add the chopped kale and stir-fry for 2 minutes.
3. Add the stock, salt and pepper, mix well then cover and simmer for 10-15
minutes or until the kale is tender, stirring once or twice during the cooking
time. Serve immediately.
