Chorizo Potatoes Veg HT ACC
Serves 4 Hot Pork Vegetables

2 tbsp Olive Oil
225g/8oz Chorizo, very thinly sliced
6 small Potatoes, peeled and cut into 1cm/½ -inch cubes
1 Small Onion, chopped
Salt and pepper
2 teasp Paprika
2 tbsp Freshly Chopped Parsley
1. Heat the olive oil in a large frying pan, add the chorizo slices and fry for
2 minutes on each side.
2. Add the potatoes and onions to the
pan, season with salt, pepper and paprika turn to coat, partially cover and cook
over a medium heat for 15 minutes, or until tender, turning from time to time.
3. Uncover the pan, raise the
heat and continue to fry for a further 2-3 minutes to lightly brown on all
