2 tbsp Olive Oil 2 tbsp Freshly Chopped Parsley
2. Add the potatoes and onions to the pan, season with salt, pepper and paprika turn to coat, partially cover and cook over a medium heat for 15 minutes, or until tender, turning from time to time.
3. Uncover the pan, raise the heat and continue to fry for a further 2-3 minutes to lightly brown on all sides.
4. Add the parsley, mixing well.
Serve immediately
