Cider Baked Sweet

900g/2lb Sweet Potatoes, peeled and cut into 2.5cm/1-inch chunks
50g/2oz Brown Sugar
1 x 7cm/2-inch Cinnamon Stick
½ teasp Ground Allspice
1. Place the potatoes, cider, brown sugar, half the butter and cinnamon stick in
a large saucepan, bring to a boil then reduce the heat, partially cover and
simmer, stirring from time to time for about 45 minutes or until the potatoes
are very tender.
2. Preheat the oven to 170C, 325F, Gas Mark 3 and grease a shallow ovenproof
dish with butter. Remove the cinnamon stick and any excess cooking liquid from
the potatoes. Add the allspice then mash until very smooth.
3. Transfer to the greased dish, dot with the remaining butter
then cover with aluminium foil and bake for about 20 minutes, stirring once half
way through cooking.
4. Remove the foil and bake for a
further 5 minutes.
