Green Beans Serves 4 Hot Vegetarian Vegetables Nuts Fruit Herbs Accompaniment Gluten Wheat Free Eggless
Ingredients 450g/1lb
French Beans Salt 50g/2oz Butter 4
Spring Onions, thinly sliced 50g/2oz
Chopped Walnuts, toasted 2 teasp Fresh Rosemary Leaves, finely chopped 2
tbsp Lemon Juice 1
teasp grated Lemon Rind Instructions
1. Place the beans in a large saucepan, cover with water and season with salt. Bring to the boil, reduce the heat and simmer for 5-10 minutes until just tender.
2. Meanwhile, heat the butter in a large saucepan add the onions, and sauté until tender.
3. Drain the beans well then add to the saucepan containing the onions together with the walnuts, rosemary, and lemon juice. Cook over a medium heat stirring constantly, until heated through.
4. Transfer to a heated serving dish, sprinkle with the grated lemon rind and serve immediately.
