Creamed Mushrooms

Serves 4 Hot Vegetarian

Ingredients
2 medium Onions, finely chopped
50g/2oz Butter
675g/1 ˝ lb Fresh Mushrooms, cleaned and sliced
240ml/8fl.oz. Water
1 tbsp freshly chopped Parsley
180ml/6fl.oz. Sour Cream
1 tbsp Cornflour blended with a little water
Instructions
1. Melt the butter in a frying pan, add the onions and sauté gently for 5
minutes.
2. Add the mushrooms and water, bring to the boil then reduce the heat, cover
and simmer for 20 minutes.
3. Season with salt and pepper then add the dill and sour cream and mix well.
4. Add the cornflour mixture, stirring constantly and cook for a few minutes
until thickened. Serve immediately.
