Hot Vegetarian Vegetables Nuts Accompaniment Gluten Wheat
2 tbsp Olive Oil
4 teasp Pine Nuts
1 Onion, finely chopped
900g/2lb Fresh Spinach, coarsely chopped
2 tbsp Crème Fraîche
Freshly Squeezed Lemon juice
1. Heat the oil in a large frying pan, add the pine nuts and cook over a medium heat,
stirring, until they are golden. Remove them with a
slotted spoon and drain on kitchen paper. Set aside.
2. Add the
onion to the pan and sauté for a few minutes until golden.
3. Add the spinach,
cover and cook for about 3 minutes, stirring from time to time, until the spinach is
wilted and tender.
4. Add the crème
fraîche, lemon juice and season with salt and pepper. Mix well and cook for 2-3
minutes until heated through.
5. To serve
- transfer to a heated serving dish and sprinkle the pine nuts over the top.
