Dutch Red Cabbage Veg HT ACC Dutch 60mins Serves 4 Hot Vegetarian Vegan Vegetables Fruit Accompaniment Gluten Wheat Dairy Free Eggless Holland The Netherlands Europe
Ingredients 1 tbsp Olive Oil 2 Onions, chopped 6
Juniper Berries, lightly crushed 1 Small Red cabbage, thinly shredded 2 Large Apples, cored and cut into 8 wedges each 120ml/4fl.oz. Red Wine Vinegar (approximately) 100g/4oz Brown Sugar Salt and Black Pepper
Instructions 1. Heat the oil in a large saucepan, add the onions and the apples and sauté for 5-10 minutes until just softened.
2. Add the shredded cabbage and the juniper berries, mix well, cover and cook gently for about 20 minutes, stirring from time to time.
3. Add the vinegar, brown sugar, salt and pepper, mix well and cook for a further 20 minutes, without the lid, stirring occasionally. Serve hot.
Can be made well in advance and re-heated.
