Espinacas a la Catalana HT ACC Spanish 30mins
From the Cataluna Region in North-Eastern Spain
Serves 4 Hot Vegetables Fish Nuts Dried Fruit Accompaniment Healthy Eating Gluten Wheat Dairy Free Eggless Spain Europe
Ingredients 100g/4oz Pine Nuts 900g/2lb Fresh Spinach 1 tbsp Raisins 12-ml/4fl.oz. Olive Oil Salt 1 Garlic Clove, crushed Black Pepper 4 tinned Anchovy Fillets, chopped
Instructions
1. Wash the spinach well then place in a large saucepan with only the water which remains clinging to the leaves. Place on a medium heat, cover and cook for 3-5 minutes, shaking the pan often.
2. Remove the spinach from the pan and squeeze out as much water as possible then chop it roughly.
3. In a frying pan, heat the oil until hot then add the garlic and sauté until softened.
4. Add the anchovies, chopped spinach, pine nuts and raisins, and season with salt and pepper, mixing well. Partially cover and cook over a very low heat for 15 minutes stirring from time to time and adding a little water if it dries out too much. Serve immediately.
