Accompaniment Gluten Wheat Free Eggless
Runner Beans, trimmed and sliced
Onion, finely chopped
tbsp Freshly chopped Parsley
Carrot, finely chopped
and Black Pepper
Fresh Vegetable Stock
x 400g/14oz tin Chopped Tomatoes
teasp Vanilla Extract
1. Place the beans in a large saucepan, just cover with water, bring to the boil
then reduce the heat and simmer for 5 minutes.
2. Meanwhile, heat the butter in a large saucepan, add the onion, parsley and
carrot and sauté very gently for 5 minutes.
Season with salt and pepper then add the stock and the entire content of
the tin of tomatoes and mix well.
Drain the beans and add to the onion mixture, bring to the boil then reduce the
heat and simmer for 30 minutes.
Just before serving, add the vanilla extract and mix very well. Serve hot.
