Fragrant Runner Beans Veg HT ACC 45mins
Ingredients 450g/1lb Runner Beans, trimmed and sliced 25g/1oz Butter 1/2 Onion, finely chopped 1 tbsp Freshly chopped Parsley 1 Carrot, finely chopped Salt and Black Pepper 120ml/4fl.oz. Fresh Vegetable Stock 1 x 400g/14oz tin Chopped Tomatoes 1/2 teasp Vanilla Extract
Instructions
3. Season with salt and pepper then add the stock and the entire content of the tin of tomatoes and mix well.
4. Drain the beans and add to the onion mixture, bring to the boil then reduce the heat and simmer for 30 minutes.
5. Just before serving, add the vanilla extract and mix very well. Serve hot.
