Fragrant Runner Beans   Veg  HT  ACC  45mins


Serves 4-6     Hot  Vegetarian  Vegetables   Accompaniment  Gluten Wheat Free  Eggless




450g/1lb Runner Beans, trimmed and sliced

25g/1oz Butter

1/2 Onion, finely chopped

1 tbsp Freshly chopped Parsley

1 Carrot, finely chopped

Salt and Black Pepper

120ml/4fl.oz. Fresh Vegetable Stock

1 x 400g/14oz tin Chopped Tomatoes

1/2 teasp Vanilla Extract



1. Place the beans in a large saucepan, just cover with water, bring to the boil then reduce the heat and simmer for 5 minutes.

2. Meanwhile, heat the butter in a large saucepan, add the onion, parsley and carrot and sauté very gently for 5 minutes. 


3. Season  with salt and pepper then add the stock and the entire content of the tin of tomatoes and mix well.


4. Drain the beans and add to the onion mixture, bring to the boil then reduce the heat and simmer for 30 minutes. 


5. Just before serving, add the vanilla extract and mix very well. Serve hot.
