Ingredients 4 Plantains Oil for shallow frying Salt
Instructions 1. Peel and cut the plantains cross-ways into 6mm/¼ inch slices. 2. Heat the oil in a large frying pan until hot, add the slices in one layer and fry for several minutes until golden brown and tender, turning once or twice. 3. Drain on kitchen paper and salt to taste. NB Both ripe and green plantains can be used in this recipe.
