Hasselback Potatoes Veg

Finnish name: Hasselbackan perunat
Serves 4 Hot Vegetarian Vegetables
Accompaniment Gluten Wheat Free Eggless Finland Scandinavia Scandinavian
Ingredients
4 Medium Baking Potatoes
90ml/3fl.oz. Melted Butter
Salt and Pepper
2 tbsp Finely Grated Cheese e.g. Cheddar, Parmesan
Instructions
1. Preheat the oven to 200C, 400F, gas Mark 7 and grease a shallow baking tin.
Peel the potatoes then slice each potato thinly but not all the way through -
leave the slices attached at the base of each one.
2. Place the potatoes in the prepared tin, brush liberally with half of the
melted butter, season with salt and pepper and bake for 45 minutes.
3. Remove the potatoes from the oven, brush with the remaining melted butter
then sprinkle each one with the grated cheese. Return to the oven and continue
baking for a further 15 - 20 minutes or until the potatoes are golden brown and
tender. Serve immediately as an accompaniment to a main course.
