Finnish name: Kanttarellikastike
Serves 4 Hot Vegetarian Vegetables
Accompaniment Gluten Wheat Free Eggless Finland Scandinavia Scandinavian
1 large Onion, chopped
675g/1 ˝ lb Fresh Chanterelles or other wild Mushrooms, quartered
30ml/1fl.oz. Fresh Vegetable Stock (or other stock)
180ml/6fl.oz. Double Cream
Salt and Black Pepper
1. Heat the butter in a large frying pan, add the onions and sauté over a medium
heat until soft and transparent.
2. Add the mushrooms and raise the heat to high and cook for about 10 minutes,
stirring constantly, or until most of the moisture has evaporated .
3. Add the stock cream, salt and pepper, bring to the boil and cook for a
further 10-15 minutes, stirring from time to time, or until the sauce has
thickened. Serve immediately.
