Leeks Veg HT
Serves 4 Hot Vegetarian
Vegetables Fruit Accompaniment Gluten wheat Free Eggless
1 tbsp Olive Oil
4 Leeks, trimmed, cut lengthways into quarters and well washed
120ml/4fl.oz. Fresh Stock
2 teasp Freshly grated Lemon Zest
Salt and Pepper
1. Heat the butter and oil in a large saucepan, add the leeks and sauté for 5
minutes, stirring occasionally.
2. Add the stock, lemon zest, salt and pepper, mix well then reduce the heat,
cover and simmer for 5 minutes, or until very tender.
