Serves 4 Hot Vegetarian Vegetables Accompaniment Gluten Wheat Dairy Free Morocco North African Nth Africa
Ingredients 3 large Potatoes, peeled and cut into chunks 4 large Eggs 1 teasp Salt Black Pepper 1 teasp Cumin 1 tbsp freshly chopped Parsley 1/2 teaspoon Ground Turmeric 4 Garlic Cloves, crushed 1 Onion, grated
Instructions
1. Preheat the oven to 180C, 350F, Gas Mark 4 and grease a shallow ovenproof dish (about 20cmx30cm/8x12 inches).
2. Place the potatoes in a saucepan, cover with water, bring to the boil then cook, uncovered, for about 20 minutes or until the potatoes are soft.
3. Drain the potatoes well then return them to the pan and mash with a fork or potato masher.
4. In a large mixing bowl, beat the eggs until frothy. Add the salt, pepper, cumin, parsley, turmeric, garlic and onion and mix well.
5. Add the potatoes to the egg mixture and mix well. Spread the mixture in the greased dish and bake in the oven for about 50 minutes or until the top is golden and crisp. Allow to cool slightly before cutting.
