16 baby Carrots, halved
120ml/4fl.oz. Double Cream
2 Egg yolks
1 tbsp Freshly Chopped
1. Melt the butter in a
medium saucepan then add the milk, salt,
pepper and carrots and cook gently over a medium heat for 15-20 minutes or until

3. Return to a low heat and
cook, stirring constantly, until
the mixture thickens.
4. Adjust the seasoning, sit
in the parsley and serve immediately.
