Mushrooms
with Stilton Veg

Ingredients: 8 Large Flat Mushrooms
25g/1oz Butter 1 tbsp Finely Chopped Onions 50g/2oz Stilton Cheese
1 teasp Mustard
25g/1oz Fresh white Breadcrumbs
Salt and Black Pepper
Instructions
1.
Preheat the oven to 180C, 350F, Gas Mark 4. Remove the stalks from the mushrooms
and chop finely.
2.
Wipe the caps with damp kitchen paper.
3.
Melt the butter in a saucepan add the chopped mushroom stalks and
onions and fry gently until soft and transparent.
4.
Remove the pan from the heat and allow to cool for 5 minutes, then crumble in
the cheese and add half the breadcrumbs,
mustard, salt and pepper. Mix well.
5. Lightly oil a shallow ovenproof dish, large enough to take the caps in one layer.
6. Place the caps in the buttered dish and divide the stilton mixture between them, smoothing lightly.
7. Sprinkle with the remaining breadcrumbs and bake in the oven for 15-20 minutes until the caps are just tender and the topping is golden and bubbling. Serve immediately.
Particularly good served with grilled meats.
