Onion Mashed Potatoes HT ACC 30mins
Ingredients 900g/2lb Potatoes,
peeled and cut into chunks
Instructions
1. Place the potatoes in a large saucepan, cover with water, add some salt then bring to the boil and cook for 15-20 minutes or until very tender.
2. Meanwhile, heat a frying pan until very hot, add the bacon and fry until browned all over. Remove with a slotted spoon and drain on kitchen paper.
3. Add the spring onions to the frying pan and sauté over a medium heat until soft, but not brown. Return the bacon to the pan and mix well.
4. Drain potatoes and return to the rinsed out saucepan then add the milk, crème fraîche, salt and plenty of black pepper and mash with a potato masher until quite smooth.
5. Stir in the onion mixture and reheat over a medium heat, stirring, until piping hot. Serve immediately.
You can omit the bacon for a vegetarian alternative. Just fry the onion in a little butter.
