Chorizo Sausage, chopped
Potatoes, coarsely chopped
Red Capsicum (Sweet Pepper), chopped
Tomatoes, peeled, seeded and chopped
Heat the oi1 in a flameproof casserole until hot. Add the chorizo and fry until
the fat runs, stirring from time to time. Remove the chorizo with a slotted
spoon and set aside.
Reheat the oil then add the potatoes and onion and sauté for 5 minutes,
capsicum and fry for 5 minutes, then add tomatoes, fried chorizo, salt and
stock or water to just cover, bring to the boil then reduce the heat and simmer
for about 15 minutes or until potatoes are tender and most of the liquid has
been absorbed. Serve hot.
