Patatas con Chorizo HT ACC Spanish 40mins
Serves 4 Hot Vegetables Pork Accompaniment Dairy Free Eggless Spain Europe
Ingredients 4 tbsp Olive Oil 100g/4oz Chorizo Sausage, chopped 675g/1 ˝lb Potatoes, coarsely chopped 1 Onion, chopped 1 Red Capsicum (Sweet Pepper), chopped 350g/12oz Tomatoes, peeled, seeded and chopped Water or stock
Instructions
1. Heat the oi1 in a flameproof casserole until hot. Add the chorizo and fry until the fat runs, stirring from time to time. Remove the chorizo with a slotted spoon and set aside.
2. Reheat the oil then add the potatoes and onion and sauté for 5 minutes, stirring occasionally.
3. Add the capsicum and fry for 5 minutes, then add tomatoes, fried chorizo, salt and pepper.
4. Add enough stock or water to just cover, bring to the boil then reduce the heat and simmer for about 15 minutes or until potatoes are tender and most of the liquid has been absorbed. Serve hot.
