Pineapple and Sweet Potato Bake

2 medium Sweet Potatoes, cooked and thickly sliced
1 fresh Pineapple, peeled, cored and thinly sliced
4 tbsp freshly grated Coconut
4 tbsp Spring Onions, chopped
Salt and Pepper
1. Preheat the oven to 180C, 350F, Gas Mark 4 and
grease an ovenproof casserole dish.
2. Arrange the sweet potato, pineapple, coconut, spring onions and cheese sauce in layers
in the dish, seasoning each completed layer with salt and pepper and ending with
a layer of cheese sauce.
3. Bake for about
30 minutes. Serve hot.
