Polish Beets

Ingredients
1 tbsp Butter
1 Small Onion, finely chopped
120ml/4fl.oz. Plain Yogurt
4 Cooked Beetroot, peeled and shredded
3 tbsp Freshly Grated Horseradish
2 tbsp Sugar
Salt and Pepper
2 tbsp Freshly Chopped Parsley
Instructions
1. Heat the butter in a medium saucepan, add the onion and sauté gently for 5
minutes, turning from time to time.
2. Add the yogurt and heat to just below the boiling point then add the
beetroot, horseradish and sugar, and cook very gently for 2-3 minutes.
3. Season with salt and pepper to taste and sprinkle with the parsley
