Portuguese Fried Potatoes

Portuguese name: Batatas a Portuguesa
Serves 4 Hot Vegetables
Vegetarian Accompaniment Gluten Wheat Free Eggless Portugal Europe
60ml/2fl.oz. Olive Oil
675g/1½ lb Potatoes, peeled and sliced into 6mm/¼ inch rounds
Salt and Black pepper
1 tbsp freshly chopped Parsley
1. Heat the butter and oil in a frying pan add the potatoes and fry over a
medium heat for 10-15 minutes turning every few minutes, until golden brown on
all sides and cooked through.
2. Season with salt and pepper then transfer to a warmed serving platter,
sprinkle with parsley and serve immediately.
