Potato Pancakes With Juniper Veg HT ACC 45mins
Serves 4 Hot Vegetarian Vegetables Fruit Accompaniment Gluten Wheat Free Eggless
Ingredients 450g/1lb Potatoes, peeled and grated 1 Egg, beaten Salt and Pepper The grated Zest of 1 Small Orange 5 Juniper Berries, well crushed 25g/1oz Butter 2 tbsp Olive Oil
Instructions
1. Preheat the oven to low. Place the grated potatoes in a mixing bowl together with the egg, grated orange zest, juniper berries, salt and pepper and mix well.
2. Heat the oil and butter in a large frying pan until hot then divide the potato mixture into eight and drop each portion into the hot oil/butter, flattening each into a patty. You will probably have to do this in batches.
3. Fry for 10-15 minutes turning from time to time until golden brown and crisp on the outside and soft and cooked through on the inside.
4. Drain on crumpled kitchen paper and keep hot (uncovered) in the oven whilst you cook the remainder.
