Roast Jerusalem Artichokes Veg HT
Serves 4 Hot Vegetarian

675g/1½ lb Jerusalem Artichokes, peeled and cut into 5cm/2-inch chunks
2 Garlic Cloves,
Salt and Black Pepper
3 tbsp extra-virgin
1 tbsp freshly chopped Parsley
1. Preheat the oven to 220C, 425F, Gas Mark 7.
2. Place the
artichokes, garlic, salt pepper and oil in a large shallow roasting tin in one
layer and mix well.
