Roasted Asparagus Veg HT ACC 15mins
Serves 4 Hot Vegetarian Vegetables Accompaniment Gluten Wheat Free Eggless
Ingredients 1 tbsp Olive Oil 675g/1 ½ lb Young Asparagus, trimmed 3 tbsp Balsamic Vinegar Salt & Pepper 25g/1oz Parmesan Cheese shavings
Instructions
1. Preheat the oven to 230C, 450F, Gas Mark 8.
2. Heat the oil in a wide shallow ovenproof dish until hot ten add the asparagus and turn until well coated.
3. Season with salt and pepper then bake in the oven for about 10 minutes, until just tender.
4. To serve - season with salt and pepper, drizzle with the vinegar then scatter the Parmesan cheese shavings over the top. Serve immediately.
